My father in law brought me some homegrown broccoli, and my coworker brought me some homegrown yellow squash, so I wanted to make something fresh and light and healthy with those vegetables.
I had some left over grilled tomatoes from my fajita night a few nights ago

I sauteed a little butter and a big clove of garlic in a pan, then added in the broccoli, squash, and some chicken broth. Once the veggies got soft, I added in the grilled tomatoes and let that simmer for about 1 minute. Then I poured it all in a bowl, grated a little Parmasean cheese over it, and ta-da! A quick delicious meal!
