Easy Meal #2

Here is another meal idea for some of that fresh summer produce. This is a breakfast idea, or it could also go for brunch or lunch. I call it a Summer Omelette.
Ingredients:


Eggs, salt, garlic, mushrooms, basil, yellow squash, broccoli

I started with melting some butter in a pan



Next I minced up the garlic clove and let that sauté for about a minute, then I added chicken broth


I chopped up the veggies, and added the squash and broccoli in as they need to cook a little longer than the mushrooms do to get soft


While I was waiting for the squash and broccoli to soften, I decided to throw in some turkey bacon. Just cuz.





After about 4 min, I added in the mushrooms



While that was simmering, I julienned some fresh basil. In my opinion this is the best way to cut basil



Pull off the leaves and then stack them together



Then roll them up






Then just cut it from tip to end









Isn't that cute?
Next I cracked an egg into a bowl and scrambled it


Then I poured it into the vegetable and turkey bacon mixture



Same thing with second egg






I scooted the veggies and first egg mixture into the half of the pan that had the second egg



I just watched for it to look cooked and then I flipped it over






I added my cute curly basil strips



Plated it


Then ate it!



Yeah buddy!





I highly recommend making this for yourself! In the words of Cousin Eddie, it is gooo-ood!
